st. patty’s day ’19

oh st. patrick’s day. i neither love nor hate it. i just never really celebrated it but since having kids, it gives me a great excuse to get festive!

we started our morning with green lucky charm pancakes, whipped cream, bacon, and green milk {hc cooked us mexican inspired breakfast}. the girls loved it! they ate more whipped cream and marshmallows than anything else! we’re so lucky hc loves to cook and do special things like this for the girls and us!

before breakfast commenced, hc prepped all the ingredients for our corned beef and cabbage meal. he threw it all into the slow cooker and we waited! i love this meal…or really i loooooooove cabbage! yes, it’s so good! it could eat cabbage allll the time!

after breakfast, cleaning up, and getting the girl all jazzed up, we dropped them off at my sister’s place and hc and i took off for a day date! he had scheduled a couple’s massage for us at a place in naperville. i’m always anxious about trying new places in the ‘burbs cause it’s honestly hit or miss and i find it’s mostly miss. eep!

well, this place was nice! i really enjoyed it. it was new, clean, and everyone was friendly and kind. that’s always a plus cause nowadays i feel like you walk into a business and no one cares. wtf?? anyhoo, the receptionist was so friendly, my masseuse bernice was very helpful, nice, and really spent her time listening to me and suggested ways to help me improve my posture so my back doesn’t get so tight and cramped up! the experience was so good! as it should be! oh i felt like butter afterwards!

in honor of st. patty’s day, olive and i also made rainbow cupcakes! i have to tell you, she did such a great job!! she really did! she put the ingredients into the bowl, used the mixer to smooth out the batter, separated the cupcake liners into the pan, mixed the food coloring into the separated batter, spooned each color into the liners, and decorated each frosted cupcake with gold flakes, green sprinkles, gold coins, lucky charms, and rainbows!! she did good!

i was so proud of her! she has become such an amazing helper around the house. she loves to clean, put away her toys, help cook/bake, and change ellie’s diaper to name a few things she’s been keen on.

later that evening, hc put together the most delicious dinner of corned beef and cabbage. it was sooooooo good! the carrots, potatoes, cabbage, and beef were perfect! plus, i must have it on record that this was the first time the girls ate EVERYTHING. yes, everything. up until a month ago, getting olive to eat anything green was almost impossible. but on this night, she ate her carrots, cabbage, potatoes, and beef! i was so impressed! ellie on the other hand is much more open to eating different things but it based on her mood. one day she will eat it and the next she will not {most of the time she screams “no!!” when we try to feed her but when i tell her to eat it, sternly, she opens up her mouth and realizes she likes it!} but at least she eats her greens from time to time!

well, that was our st. patrick’s day in a nutshell. so much going on but it was truly a wonderful day! we reflected and felt so content about our day of celebration! life is good!

curious cupcake

the other night, my famille was over just to hang out. it was a true lazy day for all of us. we ate lunch, chilled, and the kids played together {like little crazy rug rats}. a few hours after lunch, little b wanted cake. chocolate cake to be exact but i didn’t have any to offer. so i decided i would make cupcakes for everyone {little b was just fine with it being vanilla}.

b was so excited. he really wanted to help. he was in the kitchen with me pretty much the whole time. asking me questions about everything! he was most curious on how long everything took. how much longer until the batter is done? how much longer for them to bake? how many more minutes unit they’re done? how many more minutes until they’re done? how many minutes until they are cool? are they still cooling? are they done now? can we frost them now? what about now? hehehehe. too cute…such a kid thing, no?

so, the cupcakes were finally cool and b frosted them with me! we had a great time frosting and sprinkling each one. i gave him a little spatula knife and he dug his little hand and little knife into the frosting and slowly swirled on bits of frosting onto each cupcake. he did well! he, at first, had a hard time swiveling his wrist back and forth so he could spread the frosting around but with a few tries, he finally got it.

we got all the cupcakes covered and sprinkled half of them to dress some of them up. thennnn, it was time to gobble them up! r, b, me, and thuy each had ourselves a sweet treat. it was great to have made cupcakes with my darling little nephew b. he was the best sous chef evah!

vanille and peppermint cupcakes

mmmmm, vanille and peppermint cupcakes! i pulled out my santa plate from our holiday decor box and got inspired to make something sweet. i thought, vanilla and peppermint cupcakes sound like a treat!

i am a bit of a crafty hoarder. i love buying stuff on sale or just because, ’cause i know i will eventually use it or need it. as i ran through the ingredients and supplies in my head, i realized i only needed a few trinkets to finish out my baking adventure. sweet!

i rummaged downstairs inside the copious amount of craft boxes i have and found myself some holiday cupcake liners. i grabbed some decorative toppings too, had all the ingredients in the cupboard, and then went to the store to buy some marshmallows and peppermint candy canes.

i preheated the oven, made the batter, and then popped the pans into the oven. i then crushed the candy canes {i only used two…that was plenty for two dozen cupcakes} and set them aside for the decorating.

after the cupcakes were done baking, i set them on racks to cool. i added peppermint extract to the frosting {half a teaspoon to maybe two cups of frosting} and whipped it together. i then scooped the frosting into my piping container and pumped each cupcake with a generous amount of frosting.

i wanted to mix up the decorating, so i sprinkled some cupcakes with coconut {snow!} and added on the crushed peppermint. or i just added on the crushed peppermint and topped it off with the elf on the shelf. or i placed a vanilla marshmallow tree instead. i just alternated the decorative ingredients and voila! my sweet vanille and peppermint cupcakes! yum!

cupcake creations

one lovely evening, olive and i went over to my parent’s house to help my sister kim bake cupcakes for reagan’s soccer team. the occasion? his birthday!

we headed over and got crackin’ on eating dinner. hello. first things first! hc placed an order for pizza…enough pizza for a small village. after noshing, kim was so excited to give olive her gift. awwww, such a thoughtful auntie and godmother! she gave olive a hello kitty rattle plush toy {olive loves it!}, the kitty cat is usually olive’s buddy during car rides! she also gave little o an adorable pumpkin coat! so fun! of course, we dressed olive in the garb and she was like, ‘stop playing dress up with me…i’m busy playing’.

after the shenanigans, we got serious with our cupcake making. thuy started the cupcakes, i decorated them, and kim finished out the packaging. total sister work! they turned out super cute. it was, obviously, a soccer theme. kim had gotten the polka dot cupcake liners, soccer toppers, and cups. i added in the cellophane bags, sprinkles, black ribbon, and frosting. ta da! soccer themed birthday cupcakes for reagan’s team!

it was a fun evening. the kids always have so much fun together. hc took olive home early to bathe her and grace stayed behind to play a little longer with the boys. after a bit, we finally headed home {ya know, that long drive from my parent’s house 😉 ]. all in all, it was a sweet, perfect evening.
